How do you get your kids to eat their green beans? Add a little bacon! Actually, this time I used canadian bacon because I had a couple of slices left in the refrigerator from pizza night. This is a delicious and easy recipe that somehow makes eating veggies a little less painful for finicky eaters.
Green Beans With Bacon
1 pound fresh green beans, ends snapped off, washed and drained
3-4 slices of bacon
1/4 medium onion, diced
zest from one lemon
3 tablespoons butter, cut into pieces
pinch of salt
pinch of pepper
Preaheat oven to 400 degrees. In a skillet on medium heat, par cook bacon and onion together until bacon is mostly done and onions are semi-translucent. Drain off all but 2 tablespoons of grease. In a glass baking dish or casserole dish, place green beans, sprinkle with salt and peper, top with bacon/onion mixture, lemon zest and butter. Cover pan with lid or tin foil. Bake in oven 25-30 minutes or until beans are done to your likeness. Stir mixture half way through cooking.
