Maybe it’s in the ingredients or maybe it’s in stirring your own brand of love into the soup pot. Whatever it is, the soup turned out just right and it also did a great job of healing. My daughter woke up this morning feeling much better.
Chicken Soup With Homemade Noodles
1 pound boneless skinless chicken meat, cut into bite sized pieces (you could also use leftover chicken meat)
2 cups chopped carrot
1 1/2 cup chopped celery
1 1/2 cup diced onion
4 cloves minced garlic
1/2 cup fresh chopped parsley
pinch of fresh thyme
2 tablespoons butter
2 tablespoons olive oil
8 ounces chicken stock
Salt and pepper to taste
In a large pot on medium, heat oil and butter together. Add chicken, carrot, onion, celery and garlic and cook, stirring occasionally for about 6 minutes. In this case, I also had some leftover broccoli stems that I diced and added in as well. Stir in chicken stock, parsley and thyme. Bring mixture to a boil. (Note: at this point, you could salt and pepper the mixture, add in some frozen corn and/or peas and make the mixture into a pot pie). Add water to desired level and continue boiling until veetables are tender. If using fresh noodles, add in the noodles and turn off heat since they only take a couple of minutes to cook. If using packaged noodles, add them into the soup and boil for the time indicated on the pasta package. See my prior post or below for fresh pasta recipe.

1 1/2 cups flour, sifted
pinch of salt
2 egg yolks
8 tablespoons lukewarm water (filtered or bottled if you have poor water quality)
Mix together flour and salt, add in egg yolks and combine well. Begin adding in water, one tablespoon at a time, until a stiff dough forms. On a lightly floured surface, roll dough to desired thickness and cut to desired shape. In this case, I used a pasta roller, then a fetuccini cutter to make noodles.
