I just had to follow up Amelia’s awesome storing basil experiment post with this very quick, basic and popular salad that is super refreshing, yet satisfing in the summertime.
Caprese Salad
1 large tomato, sliced into 1/4 inch slices
1 pound buffalo mozzarella, sliced into 1/4 inch slices
1/2 cup of basil sliced into ribbons
2-3 tablespoons balsamic vinegrette
Fresh cracked black pepper
On a plate or decorative platter, first lay down the slices of cheese, top with slices of tomato, garnish with basil, drizzle with balsamic vinegar and sprinkle with pepper. Easy, right?
