This week we had some delicious pastrami ruben sandwiches. As I rummaged through my fridge for dinner a couple of days later, there wasn’t really enough fixin’s left for more than one sandwich, and generally speaking, a whole ruben is a little more than I can handle anyway, so I got creative. This would make a great make appetizer or even a little side bite with some soup.

Pastrami Reuben Toast Points
2 slices rye bread, cut into sixths
3 tablespoons thousand island dressing
2-3 slices of pastrami
1/3 cup saurekraut
2 slices of swiss cheese, cut into pieces roughly the same size as the bread
Preaheat oven to 400 degrees. Place slices of bread on a cookie sheet and spread with a little thousand island dressing, making sure to get the edges. Top with a little pastrami and swiss cheese. Bake for 5-6 minutes or until the cheese has melted on the top. Remove toast points from oven and, while still hot, top with a little bit of sauerkraut. Serve right away.
