From the Garden to the Grill

This year I’ve spent a lot of time in my garden. I’m currently beginning to enjoy the fruits of my labor, and last night we enjoyed a great meal that went from the garden to the grill. It did make a couple stops, for washing, chopping, seasoning and skewering before it hit the grill.

To marinade your vegetables, start simply:
1/4-1/3 cup olive oil
4 Tbs fresh herbs of your choice
Salt & pepper

Mix together in a bowl. Allow veggies to marinade in oil and herb mixture for about 10 minutes. Save remainder of oil mixture for basting.

Skewer and lightly salt your veggies, then grill your to your liking, being careful not to overcook them. When you flip each skewer, lightly baste it with a little bit more of the herb and oil mixture.

I can’t think of a better meal than one that comes directly from my garden! Add a little protein and you have a wonderful meal.

Have a fabulous day!
