Many years ago, a long time family friend, Mimi, imparted to me the easiest 4-ingredient basic Teriyaki marinade recipe ever. Since then, I’ve used it as my “go to” recipe but have, over the years, also added a few ingredients of my own. The original 4-ingredient recipe follows, with my additions added as “(optional)” underneath.
SUPER EASY 4-INGREDIENT TERIYAKI MARINADE
½ cup soy sauce
½ cup sugar
½ cup beer
½ cup pineapple juice
1 tablespoon finely diced fresh garlic (optional)
2 tablespoons molasses (optional)
2 tablespoons honey (optional)
1 tablespoon freshly grated ginger (optional)
½ teaspoon finely diced lemongrass (optional)
Mix all ingredients together. Set aside any sauce you want to reserve for something like rice topping (yum). Never use marinade that has been on raw meat. In a large Ziploc bag, place meat and marinade and let soak for at least 2 hours. Cook meat accordingly. Tonight I opted for boneless chicken breasts. I cooked these breasts on medium heat on a hot, oiled skillet, covered, for 5 minutes on the first side and 3 minutes on the second side and I put a little marinade in the pan while cooking as well. Moist, delicious, flavorful!
