With this simple recipe, you can make your own taco seasoning – minus the packet! Tacos are quick cooking and don’t completely heat my house on these long 100 degree days. They are a great summer dinner (they also rerun well as leftovers).
Ingredients:
1 lb chicken or beef, previously cooked
1 Tbs vegetable oil
2 tsp chili powder
2 tsp ground cumin
1 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 tsp onion powder
1/2 cup diced onions
1 lg tomato, diced
1 jalapeno, finely diced (optional)
1/2 cup chopped cilantro (optional)
Juice of 1 lime (optional)
1 1/2 cups liquid (see instructions below)
After pre-cooking meat, heat 1 Tbs oil in a pan over medium-high heat. Add the onions, tomato and jalapeno, sprinkle with salt and pepper, then cook until onions soften. Add in about 1 1/2 cups liquid. Water is fine – I like to use the water from a can of corn and a cup of chicken stock. Add cilantro, lime juice and all seasonings. Continue to cook over medium-high, stirring occassionally, or until almost all liquid is cooked off.
