A recipe that is so simple, it may surprise you! Rich, restaurant style Alfredo sauce only takes about 15 minutes and 5 ingredients. This can be foolproof, just remember to keep the heat to medium or lower.
Ingredients:
3-4 Tbs butter
1 cup heavy cream
1 cup freshly shredded Parmesan cheese (please don’t use the cheap shaker type)
1/4 tsp salt
1/8 tsp black pepper
1 clove minced garlic (optional)
Fresh basil & parsley (optional)
Melt butter in a heavy saucepan over medium heat. Add garlic when butter is melted, allow to cook for two minutes and then add cream all at once. The cream and butter will separate in the pan, but thoroughly mixing with a whisk will incorporate them together.
Add salt & pepper. Allow to cook about 5 minutes, stirring every minute or so (if using herbs, add now). Add cheese and mix well. Allow to cook until sauce begins to thicken and cheese is melted, 5-10 minutes. Salt & pepper to taste. Serve over pasta, chicken, on warm bread – chef’s choice. Yum!
Variations: sometimes I like to use half Parmesan and half Romano cheese, or add a small diced shallot to the butter.
