Caramelized Onion and Mozzarella Grilled Cheese Sandwiches

Happy National Grilled Cheese Sandwich Day! Whether you reside in the US or not, join us in celebrating the simplicity and yumminess of a grilled cheese sandwich. This recipe isn’t for a quick grilled cheese, only because I filled it with caramelized onions! Oh yes, I did!!!

1 medium onion finely diced (yellow, red, sweet yellow, they all work fine)
2 tablespoons olive oil
1 large garlic clove, crushed or finely diced
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon sea salt
1/8 teaspoon black pepper
6 slices bread
About 3 tablespoons butter, room temperature
1/2 cup grated mozzarella cheese

In a large pan over medium heat, warm olive oil. Add onions, salt and pepper, and stir.

Stir onions approximately every 4-5 minutes. Do not raise the heat on the pan over medium. Be patient.

After about 20-30 minutes, onions will begin to turn a caramel brown color.

Add thyme, basil and oregano. Stir.

In the last 2-3 minutes of cook time, add in garlic. Cook 2-3 minutes.

Turn off heat and remove pan from heat.

Butter one side of each piece of bread. Place 3 pieces in to a separate cold pan, butter side down.

Sprinkle each piece with grated mozzarella. Use your fingers to try to evenly distribute your caramelized onion mixture over each piece.

Top with more mozzarella cheese.

Place the last pieces of bread on top, butter side up.

Turn on heat, to between medium and medium high.

Cook the first side of each sandwich for about 4 minutes, or until it is a nice golden brown.

Flip the sandwich (try to flip it one time ONLY).

Cook another minute or two until golden brown.
