French Toast

French toast has been a long time favorite of mine.  Even on very sleepy mornings, mom could always get me out of bed with the promise of the fluffy, eggy, spiced toast.  I don’t know what recipe she used (a post for another day perhaps) but here is mine.

French Toast

11 eggs
2 teaspoons sugar
1/2 teaspoon cinnamon
1/8 teaspoon freshly grated nutmeg
Pinch of salt
Splash of vanilla
1/4 cup heavy whipping cream
12-16 pieces of bread

Preheat griddle to medium heat.  In a shallow baking dish whisk together all ingredients, except for whipping cream and bread, until well combined.

Whisk in whipping cream.  Grease griddle with a little butter or cooking spray.  Dredge slices of bread in egg mixture and place on griddle.  Cook for around 2 minutes or until golden on the underside.  Flip and cook for about another 2 minutes.  Serve hot, topped with your favorite fruit and whipped cream or butter and syrup.
