Last night I was baking cookies with my friend and neighbor, Mary. We made some traditional chocolate chip cookies, but also some butterscotch chip cookies. Both were grubbin’! We split the batch. Tonight, only about two +/- of each were left. I couldn’t let them go to waste but knew the quality would degrade over time. So I did what any other rational person would have done- I made Krispie Treats out of them!
Cookie Chunk Krispie Treats
4 cookies of your choice, chopped
20 large marshmallows
2 tablespoons butter
2 cups Rice Krispies
Lightly butter a 8×8 or 9×9 pan. In a medium pot over low heat, combine butter and marshmallows, stirring occasionally until marshmallows and butter are melted together. Once melted, remove pot from heat, stir in Rice Krispies and chopped cookies. Pour mixture into prepared pan and press into pan with a lightly buttered spatula.
Let cool for around 10 minutes (or don’t – I won’t tell), cut and serve.
