Here is a great low-sugar, high-fiber, antioxidant-rich simple version of the classic PBJ. Almost every morning for breakfast, I have a single slice of peanut butter toast and a couple of ounces of orange juice. But when strawberries are in season, I can’t help but make what I call the Real Deal PBJ. It’s quick and satisfying and healthier than the sugar-laden jelly alternative. And, kids never say “no” to fresh strawberries, so this is a great way to sneak extra nutrition in on those picky eaters. This is also a good “starter recipe” for small children just learning to cook.
To all of my jam and jelly fans – don’t worry, I’m totally still making jam but why not savor the ingredients of the season while they are, well, in season!?!
Real Deal PBJ
One slice bread (use two if you want a true sandwich)
Butter (optional – I like it)
Peanut butter
1-2 rinsed, sliced strawberries (or any other fruit you like)
Toast bread to desired doneness, spread with butter and/or peanut butter, top with sliced berries and enjoy.
