It’s always great to have something quick to cook that will satisfy your family,or make a great appetizer. While flautas are usually filled with mainly proteins and then deep fried, I changed it up a little. I filled a few flour tortillas with thinly sliced bell peppers and onions, a little bit of cheese and some leftover smoked pork from my blogging partner Trish – then pan fried them instead of deep frying. These are pretty easy and fast to make, and a great use of leftovers!
For every 4 flautas you will need:
4 8 inch flour tortillas
1/2 cup leftover shredded or diced pork, chicken or beef
6-8 Tablespoons shredded cheddar cheese
1 small bell pepper, thinly sliced
About 1/4 of a small white onion, thinly sliced
Oil
Evenly roll 1/4 of each meat, cheese, peppers and onions in to a tortilla, wrapping tightly as you go.
In a large pan over medium heat, heat 1-2 tablespoons oil.
Place flautas in the pan. Cook seam side down to seal each tortilla.
Flip flautas to brown them evenly, about 2-3 minutes per side.
Serve with sour cream, salsa, or your favorite condiments.
