A light but cheesy and sweet appetizer, this is achieved by toasting bread and whipping and spreading cheese. Top each piece with a couple berries, or one very large berry.
You can make a crumbly chunk of goat cheese smooth and creamy with heavy cream and a hand mixer. You can add almost anything you want to this mixture. Herbs, honey, grated hard cheese, bacon, green onions, basil – the possibilities are endless. A crostini is just a fancy name for bread that has been sliced, brushed with oil, baked, and covered with just about anything.
Ingredients:
Baguette French bread, sliced
Olive oil
Goat cheese
Heavy cream
Fresh berries, rinsed, sliced as necessary
Preheat your oven to 450.
To make your crostini, slice baguette and brush olive oil lightly on each side of each piece. Bake 8-12 minutes, or until crispy on each side and slightly browned. Remove crostini from oven and allow to cool.
Place goat cheese in a large bowl. Using your hand mixer, whip on medium speed, adding 1-2 tablespoons of heavy cream at a time, until the mixture becomes smooth like frosting.
When the crostini is complete, allow it to cool completely. When it has cooled, you can spread each piece with creamy goat cheese. Place berries on top. Serve at room temperature.
