Here is a quick and delicious way to repurpose Thanksgiving turkey (or maybe even a reason to purchase extra turkey ). Best of all, even having made Amelia’s Honey Mustard recipe from scratch, this whole dish took less than 10 minutes. Also, if you’ve never made Amelia’s honey mustard, I would strongly encourage you to. It’s really quick to throw together, keeps forever and is so good, my brother-in-law calls it “The Magic Sauce”. I have to fully agree with him!
Turkey Honey Mustard Quesadilla
2 flour tortillas
leftover turkey meat, chopped or shredded
1 tablespoon honey mustard
couple of slices of cheese (I used cheddar and jack)
1 tablespoon oil (I’m using corn oil today)
Preheat oil in pan to medium heat. Meanwhile, divide honey mustard in half and spread over each tortilla. Lay one prepared tortilla in a pan, mustard side up, top with ½ cheese, then turkey, then the other ½ cheese. Top with second prepared tortilla, mustard side down. Let cook for around 2 minutes, or until bottom is golden. Flip quesadilla then cook for around 2 minutes more or until golden.
Remove from pan, cut and enjoy hot.
