Was your Thanksgiving turkey is the best you’ve ever had or was it just a sad, dry mess? Maybe you didn’t even cook but graciously accepted an offering of sad, dry turkey leftovers from someone else? Either way, this recipe has your solutions for the leftovers – turkey taco meat! I know it sounds a bit unconventional but repurposing meat into taco meat always seems to be a winner! And, it can be used in everything from salad to tamales.
Leftover Turkey Taco Meat
Leftover, cooked meat from turkey, chopped (I’m using mostly wing and thigh meat here)
½ bundle diced fresh cilantro
½ minced onion
1 teaspoon paprika
1 teaspoon chili powder
½ teaspoon freshly ground cumin
½ teaspoon freshly ground coriander
1 teaspoon achiote rojo paste
½ jalapeno, finely minced
juice from one lime
salt and pepper to taste
In a large skillet or pot, combine all ingredients except for salt and pepper. Add enough water to cover mixture. Turn heat to medium and let simmer, stirring occasionally until half of the liquid evaporates. Taste liquid, salt and pepper to taste, add another cup of liquid and simmer until almost all liquid is gone.
Use in any way in which you would use taco meat. Salads, tacos, enchiladas, tamales, quesadillas or maybe even some turkey tortilla soup!
