Leftovers For Breakfast – Buffalo Stew Madame

Got leftover Buffalo (or any other kind) of stew?  Here is a great hearty breakfast made from last night’s Buffalo Stew and Buttermilk Biscuits.  Perfect for the chilly weather and guaranteed to keep you going until lunch.

Buffalo Stew Madame

Leftover Buffalo Stew (or whatever you have on hand), reheated and strained portion
Leftover Buttermilk biscuit
One egg, over medium (instructions follow)
Pinch of salt
Pinch of pepper

Preheat egg skillet to medium heat.  Melt one teaspoon butter in pan.  Cook egg on one side for around 2 minutes, sprinkle with a pinch each of salt and pepper.  Flip and cook for another 45 seconds.  Remove pan from heat.  Place sliced buttermilk biscuit on plate.  Top with reheated portion of stew, liquid removed.  Top with egg and enjoy hot!
