Hash Brown Breakfast Casserole

It doesn’t have to be for breakfast! I made this for dinner. A great use for leftover ham, this recipe has been a hit at our house. I have good results making this with frozen or reconstituted potatoes. You could use leftover ham, bacon, sausage, or all of the above.

1 16 ounce package frozen hash browns, defrosted
1 bundle green onions, thinly sliced into rings
3 cups shredded cheese, cheddar and/or Monterey Jack
4 Tablespoons melted butter
6 eggs
1-2 cups diced previously cooked breakfast meat
2 teaspoons onion powder
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper

Grease a 9×13 baking dish with oil, butter or non-stick spray. Divide cheese in half, saving half for the topping. Mix all ingredients (using only half of the cheese) in a large bowl then spread into baking dish. Bake at 425 for 25-30 minutes, or golden brown around the edges.

Garnish with your favorite breakfast condiment. We used sour cream. YUM!
