Happy National Peanut Butter Lovers Day! When I think peanut butter, I can’t help but think of the highly addictive and nutritious spicy peanut sauce. This sauce is super quick to make and pairs well with things like chicken skewers or fresh spring/summer rolls or even on top of a burger (don’t judge, it’s grubbin’). But it is also good straight out of the spoon! Best of all, it can be made way ahead of time. I’m not really sure how long, exactly, it can keep in the refrigerator. I think the last large batch kept well for over a month. It may have kept longer but we ate it all.
Spicy Peanut Dipping Sauce
1/2 cup coconut milk
1 cup creamy peanut butter
2 tablespoons soy sauce
juice of 4 limes
2 tablespoons Mae Ploy Chili Sauce
1 tablespoon Hoisin Sauce
1 tablespoon sesame oil
1 tablespoon peanut oil
1 tablespoon crushed garlic
2 tablespoons crushed ginger
1/2 cup chopped fresh cilantro
Combine all ingredients together and mix until smooth. This sauce will keep indefinitely in the refrigerator. Bring sauce to room temperature before serving.
