Fast Food Friday-Grilled Goat Rib Chops

Have you ever had goat?  I have to admit-I’m a latecomer to the flavor of goat.  What have I been missing all my life!?!  What a treat!  The flavor is incredible and the texture is very similar to that of beef.

And, since it’s Fast Food Friday, a bonus-goat rib chops cook up in just a few minutes.  I got these beauties from Manas Custom Meats in Esparto, CA.  Their meats are the best!

Grilled Goat Rib Chops

Rib chops, rinsed and patted dry
Olive oil for basting
Seasoning Salt
Black pepper
Cajun Blast Lemon Herb Spray (optional)

Brush both sides of chops with olive oil, sprinkle with seasoning salt and pepper.  Let rest until room temperature. Start grill to high heat.  (I use a charcoal grill.)   Place chops on grill, spray with Lemon Blaster spray (this will make the grill flame-that’s what you want) and cook for around 1 1/2 minutes.  Turn chops, spray with Cajun Blast Lemon Herb Spray and cook another 1 1/2 minutes.

Remove chops from grill, cover with aluminum foil and let rest several minutes.
