I put lettuce and ranch dressing on this so I’m calling it a salad. Salad or not, this dinner that was devoured in its entirety with the exception of one lone tortilla. Great use up for leftovers.
What you’ll need (click on any link below to get our recipes):
2 flour tortillas per person, lightly fried in oil and drained
Spanish Rice or Cilantro Rice
Corn
Shredded Cheese
Cubed chicken with BBQ Sauce
Taco Sauce
Lettuce
Shredded Cheese
The tortillas, beans, rice, corn, bacon and chicken should be pre-cooked and warmed before assembly. Assemble the items in order. Serve. Enjoy!
