This recipe came by way of some “leftovers” in the fridge – a sheet of puff pastry and a couple small amounts of random pudding. Oh, and the desire for a good dessert! The result was incredible! And the textures and flavors just kept on coming! Couldn’t stop eating it. I used banana and pistachio pudding in this recipe but use whatever pudding you like.
Coconut Puff Pastry Tart With Pudding
1 sheet puff pastry
2 tablespoons sugar
1/2 cup coconut (I’m using toasted coconut)
1 once chocolate, finely chopped
1 cup banana pudding, prepared
1 cup pistachio pudding, prepared
Preheat oven to 425 degrees. On a lightly floured board, roll out puff pastry sheet thinly. Place on baking sheet, sprinkle with one tablespoon sugar, coconut, then another teaspoon sugar.
Bake 15-20 minutes or until golden.
Remove from oven and top with chocolate. Let chocolate melt and cool completely.
Spoon or drizzle both puddings on top, cut and serve.
