We like our lamb chops A LOT, but when they make $5 Friday special, we LOOOOOVVVVE them. (I can barely buy ground beef for that price.) Not only did my local Safeway have $5 Friday lamb loin chops, they also had 30% off lamb rib chops. Perfect for a Fast Food Friday. The whole dish, start to finish took less than ½ hour, of which most time was spent seasoning and lighting the grill. So lamb it is…oh darn!
And, if that weren’t enough, the local Mi Pueblo market also happened to have cilantro bundles 4/$1 so, given my luck, I’m going to go ahead and say this dish was fate both in terms of flavor and resource management. Oh, and it’s pretty. Score!
Lamb Chops With Cilantro Pesto
Lamb rib chops
Olive oil
Seasoning salt
Black pepper
Onion powder
Rinse lamb chops and pat dry with a paper towel. Brush both sides of chops with olive oil and sprinkle with seasoning salt, pepper and onion powder. Heat grill to high heat. Think “flame”. Cook chops for 1 1/2 -2 minutes per side. Remove from heat, place on a tray covered with aluminum foil and let rest several minutes.
Meanwhile….
Cilantro Pesto
2 cups fresh cilantro
1 – 2 cloves garlic
1 tablespoon feshly grated Parmesan cheese
2 tablespoons lemon juice
¼ cup olive oil
In a food processor, puree cilantro, garlic, Parmesan and lemon juice. Drizzle in olive oil until desired consistency is reached.
Serve together.
