I remember years ago when microwaveable French bread pizza was all the rave. But the thought of microwaving pizza, or any bread for that matter, makes me cringe just a little. I don’t even reheat pizza in the microwave. Microwaving always seems to turn perfectly good pizza into a sad, rubber crusted, weirdly textured cheese, fun house version of it’s former self. I guess the love somehow must get lost in the radiation.
Whatever the reason though, French bread pizza is super easy and fast to throw together from scratch, and from leftovers! This one is made from some thinly sliced zucchini, summer squash, asparagus and basil.
Preheat oven to 450 degrees. Cut several slices of french bread, top with pizza sauce, homemade or store bought, slices of mozzarella cheese, desired toppings and a little freshly grated Parmesan cheese. Place on a baking sheet and bake for 10-15 minutes or until bread is toasty and cheese is melty.
