If you are a regular reader, you know that we love all things Uncle Tony smokes. But on Amelia’s last trip through the Pacfiic Northwest, she brought me home a real treat from Uncle Tony’s kitchen – line caught, home canned tuna. Incredible! Gorgeous meat, perfect flavor…I ate the first jar with just a fork. For the second jar, I thought it would make a great spread for crackers. Our brother must really love us to go through this much trouble. At CPM, we SUPER love when things are made with love from scratch. If you don’t have an Uncle Tony of your own (which would be really sad), you can always use regular canned tuna, packed in water and drained.
Canned Tuna Spread
One, 8 ounce jar/can of tuna, drained
1/2 cup mayonnaise
1 tablespoon stone ground mustard
2 tablespoons olive oil
2 tablespoons bell pepper, any color, diced
2 tablespoons diced onion
2 tablespoons diced celery stalk
pinch of dill
pinch of black pepper
dash of cayenne pepper
In a small saucepan heated to medium heat, combine olive oil, bell pepper, onion and celery and cook. stirring occasionally until onions are translucent. Transfer to strainer over a bowl and allow liquid to drain.
Meanwhile….In a large bowl, combine all ingredients and mix with an electric mixer on medium until very well combined. Serve with crackers and whatever garnish you like. Today I’m using some nice small, heirloom tomatoes.
