Tiffany sent me the recipe by text and I had to try it immediately. This stuff is awesome. If you live were fresh tomatoes are abundant, I highly recommend you try this recipe. I happened to have some of these beauties left from my last trip to Larry’s Produce in Suisun.
This soup is souper simple, way delicious and it makes your house smell sooooo good. I gifted some to my neighbors and they were in love with this soup.

Wowman Jam’s Scratch-Made Tomato Bisque
2 1/2 pounds tomatoes, cored and cut
1 small onion, sliced
4-6 cloves garlic
olive oil
salt and pepper to taste
fresh basil (optional)
cream (optional)
Preheat oven to 425 degrees. Place tomatoes, onion and garlic in roasting pan. Drizzle with olive oil and sprinkle with a little salt and pepper. Roast for around 45 minutes. Remove pan from oven and let cool slightly. Scoop contents of pan into a blender and puree until smooth. Place pot on stove over medium low heat, adjust for salt, warm and serve.
