A big thanks to our dear friend and neighbor, John, for sharing this great idea with me. A perfectly cooked sunny-side up egg with lemon and fresh oregano. It couldn’t be faster or more delicious.
1 tablespoon olive oil
squeeze of lemon
dash of salt
dash of pepper
a few leaves of fresh oregano, torn
Heat a non-stick egg pan to medium heat. Drizzle in olive oil and heat just until hot. Place egg in skillet, sprinkle with salt and pepper. Cook until whites are cooked through. Using a spoon, drizzle a little of the hot oil in the pan over the yolk part of the egg. Place egg on a plate, squeeze a little lemon on top and garnish with fresh oregano. Serve with homemade pita bread for an extra special treat.
