Lil’s Potato Salad

Best. Potato. Salad. Ever.  For reals.  This is our friend Lil’s recipe and it’s crazy good. We served it when we catered the community BBQ and pool party this past weekend.  All of the party goers raved about it and asked for the recipe.  Will Lil’s permission, here it is! This potato salad has only a few ingredients but every time we serve her recipe, there is none left.  Thanks, Lil!

Serves 25ish

Lil’s Potato Salad

10-12 whole medium russet potatoes, skins on
8 hard boiled eggs
2 celery stalks, rinsed
6 green onion, rinsed
Best Foods mayonaise
salt and pepper to taste

Boil potatoes around 25 minutes.  Let cool.  Cut up celery and green onions in small pieces.  After potatoes and eggs have cooled, peel potatoes and cut small pieces and put in a large (non metal) bowl.  Add in green onions and celery.  Cut eggs up into pieces and put in bowl.  Add in mayonnaise (start slow then add as you like – we use 1/2 cup-3/4 cup). Add salt and pepper to taste.  Stir up.  Chill.  Enjoy.
