Yes that’s right! A TACO WAFFLE! I got a great waffle iron as a gift over the holidays, and the days following led to a lot of different waffles. Best of was the taco waffle! It was simple to make with doctored cornbread batter and taco night leftovers.
Ingredients:
1 cup flour
1/2 cup corn meal
1/2 cup corn flour
5 tablespoons sugar
4 teaspoons baking powder
scant teaspoon salt
6 tablespoons melted butter
2 beaten eggs
1 3/4 cup milk
Mix dry ingredients together. In a separate bowl, combine wet ingredients. Add wet ingredients to dry ingredients.
Then add your taco leftovers! I used:
3/4 cup leftover taco meat
1/4 cup leftover Spanish rice
1/2 cup shredded cheddar cheese
Fold taco ingredients into batter. Prepare waffles according to instructions included with your waffle iron.
Top with sour cream and freshly made salsa, or use your own favorite toppings!
