Why not add some nutrition to your Spanish Rice? Throw in some veggies!
Ingredients:
1 large carrot
2 medium ribs celery
1/2 medium onion
1 small green bell pepper
1 large tomato
1 3/4 cups white rice
4 cups vegetable or chicken stock, or water
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chili powder
1 1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 tablespoons oil
Few dashes cayenne or hot sauce (optional)
Instructions:
Dice all veggies into small uniform pieces.
In a large pre-heated pan over medium high heat, add oil, carrot, celery, onion and bell pepper. Cook for about 4 minutes, stirring frequently, then add tomato and cook for another minute.
Add rice and stir. Allow rice to cook for about 4 minutes, stirring frequently until it begins to brown.
Add liquid and spices. Mix. Bring to a boil. Reduce heat to low. Cook for 15-20 minutes, until rice is soft.
