Slow Cooker Caramelized Onions
8 medium onions, diced
Several sprigs fresh thyme (almost and entire herb box)
2 sticks butter, sliced
½ teaspoon salt
¼ teaspoon pepper
Dice four onions and place them in the cooker. Top with half of the thyme and half the butter.
Dice four more onions and place in cooker. Sprinkle with salt and pepper. Top with remaining thyme and butter.
Cover and cook 8-10 hours on low, until caramel colored. You may need to stir them once or twice near the end of the cooking cycle to ensure even cooking.
Remove thyme stems and enjoy!
