Hot N Fast! BBQ Kielbasa, Smoked Sausage or Lil’ Smokies over Rice


This is one of my favorite “30 minutes or less” meals. Use kielbasa, smoked sausage or even some Lil’ Smokies. My family loves this dish, and I make it year round.

Ingredients:
1-2 Tbs vegetable oil
1 12-16 oz. kielbasa sliced into discs
2 cups cooked rice
1/2 small onion, sliced into thin strips
1 bell pepper, sliced into thin strips

BBQ Sauce:
2 cloves of garlic, crushed or grated finely
1/2 cup ketchup
1/3 cup brown sugar
1/3 cup honey
1 Tbs Worcestershire
2 Tbs soy sauce
1-2 tsp chili powder (depending on preference)
1 Tbs onion powder
2 tsp molasses
1/4 tsp black pepper

    

Heat oil in a large skillet over medium-high heat. Place sausage discs in a single layer and brown each side (2-3 minutes per side should do).

Lower heat to medium. If adding vegetables, add after the sausage is browned and cook until they begin to soften.

Pour brown sugar over meat and vegetables, stirring until completely dissolved. Add remaining BBQ sauce ingredients, stir well and bring to a low boil. Lower heat to medium-low and cover with a screen to prevent splatters. Cook for 10 minutes, or until sauce has thickened. Serve over rice.

Want to make it spicy? Add one finely diced jalapeno pepper with the onions, or add some hot sauce with the ketchup.
