Fast Food Friday: Fajita Quesadilla


What do you do with fajita leftovers? Maybe put it on a salad, or eat more fajitas. Or make quesadillas! At my house, they’ll eat just about anything I throw in a tortilla.
For each quesadilla, you will need:
3-4 Tablespoons freshly grated cheese, preferably a combo of cheddar and Monterey Jack

1/4 cup fajita leftovers, chopped into smaller pieces (get my fajita recipe here)

1 flour tortilla, or two smaller corn tortillas 

Small amount of corn or vegetable oil 

In a pan over medium heat, drizzle a small amount of oil, 2-3 teaspoons. Place cheese and fajita leftovers on half of the tortilla. Fold over. Cook 4-5 minutes on the first side, flip, then cook 1-2 minutes on the second side. Allow to cool for a 2-3 minutes before slicing.

  1. Wow Amelia , it was easy, quick and delicious. I used leftover grilled chicken breast and sliced it into thin strips and also sauteed onion, pepper and mushrooms (half cooked). It came out great. The best way to consume leftovers, Loved it. Thanks for sharing.
