For those of you who don’t know yet, our brother, Anthony, makes the most amazing smoked salmon on the planet. Last week I received a huge delivery of this delicacy. After everyone had their fill of samples (is there such a thing?), I thought maybe I could create a waffle which mirrored our favorite smoked salmon appetizer. It worked out gorgeously – nice crisp outside, hot, creamy, spicy, smoky filling. A hand held dream!
Spicy, Creamy, Smoked Salmon Croissaffle
One mini croissant
3 pickled jalapeno rings, minced
½ ounce smoked salmon
1 ½ tablespoons cream cheese
Cut croissant lengthwise, leaving one edge in tact. Smear with cream cheese, top with jalapeno and smoked salmon. Place in waffle iron, smash and cook for around 2 minutes or until golden.
